These Summertime Pasta Salads are an all time favorite in our house. My kids are constantly asking me to make one of them at least once a week. In fact, even some of my family members will ask for it when we all get together for our family picnics or birthday’s. Besides, Have you ever wondered where you get some of these recipes? I know I do. Some were handed down from what I remember as a kid and some I may have gotten from friends or even some off the Internet. Either way I love the one’s below no matter where they came from. I’ve just tweaked them to my liking. I hope you will enjoy them as much as I do. Bon Appetit!!

I enjoy Pairing some of my Pasta Salads with a nice glass of wine, it’s just one of the ways I like to start a Dinner Party. As well as using some freshly picked Veggies Straight from my garden, they always add some additional color and Amazing flavor. Whether we’re enjoying a quiet evening on the patio or an outdoor Family gathering. Pairing a glass of Wine turns this simple meal into an all around Amazing evening with my Family. And Being that I belong to an Amazing Exclusive Wine Club!! Then again I’m always bringing out a couple different kinds of Wine so everyone can get an idea of what different wines taste like with each of the salads.

Popcorn Salad
- 2 Cups Chopped Water Chestnuts (I use 1-8oz Can)
- 1/2 Cup Chopped Green Onions
- 1 lb. Bacon Cooked and Crumbled (I always make it crispy)
- 2 Cups of Chopped Celery
- 2 Cups of Shredded Cheddar Cheese
- One Large Size bag of “Old Dutch” White Popcorn
For the Dressing:
- 2 Cups of Real Mayonnaise (I use Kraft)
- 2/3 Cup of Sugar
- 3 or 4 Tablespoons of Apple Cider Vinegar
Mix Dressing together and then add above ingredients (except popcorn) and Marinate it Overnight. Then Before serving Slowly add the Large bag of “Old Dutch Popcorn” and Stir. Recipe will keep for 3-4 days, But I have never had Leftovers to taste the next day. Simply Amazing!!!

Cucumber Salad
- 1 1/2 Cooked Noodles
- 2-3 Cucumbers Peeled and Cut into Chunks
- 1 1/4 Cups of Vinegar
- 1 1/4 Cups of Sugar
- 1 Cup of Oil
- 1/2 Chopped Onion
- 1 Tsp of Mustard
- 1 Tsp of Garlic Powder
- 1 Tsp of Salt
- 1 Tsp of Pepper
- 1 Tablespoon of Fresh Chopped Parsley
Mix all Ingredients together (except for the Noodles and Cucumbers). Pour the Mixture over the Noodles and Cucumbers. Blend Well. Marinate overnight. Give a good Stir before serving. Yum!!
Fresh from the Garden to the Table: a Summertime Family Feast!
Without a doubt, everybody I know loves Fresh Vegetables. That’s why I always Love to bring my own garden fresh veggies to the table is every chance I can. In other words there’s something to be said about picking the produce right from your own garden, and yes it is such a rewarding experience. Especially when your using some of the fresh Red Tomatoes, to Crisp Salad Greens to whatever else you have in the garden. Therefore, there’s a sense of pride I take when I am harvesting all my own vegetables. Taking from my garden and then to my plate, the journey is a celebration of sustainable living seeing it transform my meals into Unforgettable Experiences.
No Name Chopped Salad
- 2 Cups of Pasta (I use Rotini)
- 2 Cups Chopped Romaine Lettuce
- 2 Cups Shredded Iceberg Lettuce
- 2 Cups Red Cabbage
- 2 Cups Diced Cooked Chicken
- 2/3 Cup of Cooked Bacon (crispy)
- 2 Tomatoes Seeded and Chopped
- 2/3 of Cup Gorgonzola Cheese Crumbles
- 1/2 Cup Diced Green Onion
For the Dressing:
- 1/3 Cup of Olive Oil
- 1/4 Cup of White Balsamic Vinegar
- 1-2 Tsp Pure Maple Syrup (or sugar)
- 1 Tsp of Dijon Mustard
- 1 Clove of Garlic Finely Minced
- 1/2 Tsp of Dried Oregano
- 1/4 Tsp of Salt
- And Freshly Ground Black Pepper
In a Large Bowl mix all the Top Ingredients together. And then in Another Bowl combine all the Ingredients for the Dressing together and then Pour over the Salad Mixture. Chill for 1 hour before serving.
